CUCUMBER TAPA

4 cucumbers

2 tbs. extra virgin olive oil

1 tsp. basalmic vinegar

4 oz. feta cheese (basil & tomato)

1/4 tsp. salt

pinch ground pepper

fresh oregano, basil, parsley, green onion

 

1.  Peel cucumbers and slice cucumbers lengthwise; remove seeds.  Cut 2 cucs into 1/4 inch dice and transfer to a bowl.  Add rest of ingredients and toss.

 

2.  Cut 2 cucs in thick slices and remove as many seeds as possible with melon baller (still leave a layer on the bottom.

 

3.  Fill the slices with mixture.

 

Optional - could add sliced olives and/or tomatoes.  I did add tomatoes for the party.
